Properties: White crystalline powder, 6-deoxy-L-mannose, a derivative in which one hydroxyl group of 6-mannose is replaced by hydrogen. It is soluble in water and methanol, and slightly soluble in ethanol. Its crystals come in two forms, alpha and beta. The α-type contains a molecule of crystalline water. After heating, it loses the crystalline water and changes to the β-type (molecular weight is 164.16); the β-type is extremely hygroscopic and changes to the α-type when it absorbs moisture in the air. Commonly known as α-L-rhamnose, it has a sweet taste and exists in the form of pyran in aqueous solution. It has reducibility. It is oxidized with bromine water to generate rhamnoic acid, and then oxidized with nitric acid to generate L-arabinic trihydroxygearic acid. Use sodium amalgam to get rhamnol in principle. Its sweetness is 33% of sucrose
